The next frontier for animal-free dairy? ‘Slow-release’ mineral delivery, says Eden Brew

Eden Brew's New Frontier in Animal-Free Dairy

Eden Brew, a Melbourne-based precision fermentation startup, has shifted its strategy to focus on higher-value markets for its initial launch.

The company, which initially planned to produce animal-free milk with dairy co-op Norco, has pivoted to a B2B strategy focusing on supplements, sports nutrition, and food fortification, according to CEO Jim Fader.

When casein molecules are formed in cow’s milk, they fold up into a spherical “micelle” structure in which individual proteins are suspended in a solution along with calcium and other minerals.

Eden Brew's technology enables it to "load" casein micelles with iron, magnesium, and zinc, allowing for "slow-release" mineral delivery.

CEO Jim Fader discussed this development at the recent Future Food-Tech event in London.

Author's summary: Eden Brew pioneers slow-release mineral delivery in animal-free dairy.
